Canh O/Kho Qua Nhoi Thit (Vietnamese Stuffed Bitter Melon Soup)

For about 4 servings, you’ll need:
2 bitter melons
1/2 lb ground pork
1 small handful of Tree/Wood Ear Fungus/Mushroom, soaked
1 shallot, minced
3 garlic cloves, minced
1/2 tsp salt
1/2 tsp ground black pepper
1 tsp sugar
1 tblsp Nuoc Mam (Vietnamese Fish Sauce), or more to taste

Optional: 1 small bunch of vermicelli noodles, soaked and cut

Soak a small handful of tree ear mushrooms in water to soften. Soak the vermicelli noodles too if you want to use that. These serve to bind the meat together.

Mix 1/2 lb ground pork with 1 minced shallot, 3 minced garlic cloves, 1/2 tsp salt, 1/2 tsp

Almost half of India nation without power for two days straight? is it true? July 30th 2012, well apparentally so, 600 millions people without power. That’s a large # half of India state population, and it’s the 2nd largest populated country in the world behind China. What happen the whole power grid go out? well – no cell phone, no phone, no internet, no computer, anything that uses electricity go bye bye! so! this could happen anywhere in the world, are you prepare? even here in the USA, some area when it get hit by thunder storm, electricity could go out for days even weeks, so better to get a power generator or use solar power or windpower or some sort of battery system that can last you at least 7 days to be sure, sue it cost you $20K for a one time cost but will last a long time 🙂 . For communication, get a ham radio or transceiver, it can communicate to the world or walkie talkie that can go for miles 🙂 Anyhow back to the black out in India, what could cause this? someone building a secret weapon that suck all the juice off India electricity? somekind of secret device LOL no I don’t know. Hang in there my India friends, electricity shouldn’t be a big thing, you can still farm cook food and live without electricity, just not with technology that would make lives easier.

I cooked Oxtail stew for the first time and it’s tasty LOL

I realized the Ox tail I purchased at a local Vietnamese groceries store cost like $9 for like 6 pieces or so. That is expensive, didn’t really know what to do with it, but gave it a try anyways by cooking ox tail stew Vietnamese style “Bo Kh0”. I cooked it for almost 3 hours and the meat kind of shrink down but chewy, overall it’s not really good but eatable LOL. Next time, I will use less ingredient and low boil or let it sit so the meat can remain and soft.

Just in case if you don’t know, especially for tourist, it’s been known that tourist in Vietnam doesn’t know fruits food import from China has large amount of chemical that will effect human’s health greatly, recently there has been outbreak that fruits from imported from China to Vietnam are causing severe illness to people after eating oranges, and other fruits imported from China to Vietnam. Basically Chinese people knows about the chemical that causes severe illness and effect lives of many, so China exported these fruits out of their country to countries that have no control or limited control on the fruits poison level such as Vietnam, to kill and impact Vietnamese people lives and other countries, China wouldn’t dare to export to USA, they have tried in the past but failed, FDA screened the fruits here in USA, it is one of the reason US will not allow any fruits livestock from other countries to USA. So ensure when you’re traveling, know the source of foods you’re eating, where it’s coming from, or been approved by official such as FDA, if you don’t know, don’t eat it! it’s final!

Well this week has been pretty busy so far. Household chords looking the kids, playing with them, and then side business with web stuff. I actually spent great amount of time on a new website, not sure if it will be attractive to get potential customers, the basic concept is advertise restaurant business to include their menu and pictures of their meals items they can post update anytime. However it will not be another yelp, stay away from yelp 🙂 just strictly advertisement of the restaurant. Hope it work, if it doesn’t we basically loose $10 for the domain and our valuable time lol.

That’s right I have my own secret ingredients for cooking this Vietnamese Bun Bo Hue, whatever it call in English, but if I translate it, it would be Hot Spicy Soup Beef Noodle. It all depend on the soup, here in Pennsylvania where I live, it’s not convenient to go the Vietnamese food groceries, so use what I have on hand, aside from the general ingredients, I added a little bit of pineapple, pineapple juice would work as well but don’t put too much since it will make the soup bitter, put some lemon grass to make it smell good :), keep the beef in the pot until ready to eat take it out and slice it, the reason I keep the beef in the pot is to keep it moist 🙂 Yummy!
